Gentle Giant's second album was a departure from the blues and soul influences found on their debut: more experimental, more dissonant, and even more diverse instrumentation. From the liner notes:
"Acquiring the taste is the second phase of sensory pleasure. If you've gorged yourself on our first album, then relish the finer flavours (we hope) of this, our second offering.
"It is our goal to expand the frontiers of contemporary music at the risk of being very unpopular. we have recorded each composition with the one thought - that it should be unique, adventurous and fascinating. It has taken every shred of our combined musical and technical knowledge to achieve this.
"From the outset we have abandoned all preconceived thoughts on blatant commercialism. Instead we hope to give you something far more substantial and fulfilling. All you need to do is sit back, and acquire the taste."
This album was also released in the Motive series by Mercury, but only the word "Motive" appears on the cover, so it looks like the album title.

2008 reissue of the Prog rockers' sophomore album, originally released in 1971. Still one of the band's finest recorded moments, this second album was leaps and bounds better than their debut and features inventive, elegant musicianship and songs that were far more melody-based than most of their contemporaries. Eight tracks. Repertoire.

Issued in 1971, Gentle Giant's second album, ACQUIRING THE TASTE, finds the British prog-rock band honing its signature sound under the guidance of producer Tony Visconti (who would later collaborate with David Bowie on some of his finest records). ...  While the ensemble justifiably garnered comparisons to contemporaries such as Yes and King Crimson, Gentle Giant often proved to be more whimsical than those acts, as revealed on the lilting "Pantagruel's Nativity," which is lined with medieval flourishes, and the bouncy title track. Though the group would become a bit more popular with a relatively straightforward sound, this outing showcases Gentle Giant in a wildly inventive and playful mode.

The band's second album is a major advance on its first, featuring superior singing, playing, and songwriting, as well as a more unified sound, without sacrificing the element of surprise in the first record. Many of the melodies and even the riffs here (check out Gary Green's first guitar flourish on "Pantagruel's Nativity") have a pretty high haunt count, and all of the musicianship displays an elegance seldom heard even in progressive circles -- but the record also, amazingly enough, rocks really hard as well. Elements of hard rock and Gregorian chants mix freely and, amazingly enough, well throughout this album.
