Bouillabaisse is a compilation double album by Fish released in 2005. It is the third "best-of" collection after Yin and Yang (1995) and Kettle of Fish (1998), however, it covers Fish's entire solo career up to the previous year's studio album Field of Crows. The songs are divided into two sets: Disc 1, entitled "Balladeer", and disc 2, entitled "Rocketeer". It also features the single edits Marillion's three biggest hits, "Kayleigh", "Lavender" (1985) and "Incommunicado" (1987). (Unlike on Yin and Yang, these are the original versions rather than re-recordings.) It also features an edited version of "Goldfish and Clowns" from Sunsets on Empire (1997) which has never been released due to the planned single being ultimately cancelled. The only "new" track is Fish's version of the Scottish folk song "Caledonia", which had first been released on a 2002 tribute album to Frankie Miller, who had a Scottish number one with his own version in 1992. In total, the two discs contain 26 tracks (or 31, if the parts of the "Plague of Ghosts" suite are counted individually) with a total time of 143 minutes. Although not credited, the cover is a digitally edited design by Mark Wilkinson. It shows Fish sitting over a bowl of soup (presumably Bouillabaisse) in a restaurant whose walls are decorated with posters of Fish's previous album covers (an idea strikingly similar to Marillion's continental 2002 best-of album). The album marked the beginning of Fish's cooperation with the Snapper Music label, which took over the retail distribution of Fish's backcatalogue released on his own imprint Chocolate Frog Record Company. (Similarly, the previous best-of Kettle of Fish had been the first release on his short-lived connection with Roadrunner Records.)

This double disc by the enigmatic Fish - aka Derek William Dick from Edinburgh, Scotland - is exactly the perfect kind of constructed best-of for a performer who is as theatrical, dramatic, and utterly exposed as his lyrics, through all of his musical phases. Divided thematically between ballads and harder tracks, Bouillabaise showcases Fish the poet on "Balladeer" (disc one) and the rock singer on "Rocketeer" (disc two). Each disc includes moments from his years fronting Marillion. The ballads on disc one include "Kayleigh," from Misplaced Childhood, as well as "A Gentleman's Excuse Me," from Vigil in a Wilderness of Mirrors. But the finest moments occur in his duets, with the beguiling and sublimely talented Sam Brown on "Shot the Craw," from 2004's Field of Crows, and "Scattering the Crows." Then there's "Incomplete" with Elizabeth Troy Antwi, from 1999's Raingods with Zippos. "Tara" is also here as well as an edited version of "Raw Meat," from Suits in 1994, and thankfully, his wondrous cover of Sandy Denny's "Solo" from Songs from the Mirror in 1993. The combination of Fish's lyrics in these songs and the grain of his completely vulnerable and bewildered voice makes him a singular talent. In these, the protagonist, right or wrong, has his heart torn and bleeding all over his delivery. On "Rocketeer," the angrier side of the singer comes through. Check "Incommunicado," from Marillion's Clutching at Straws, or "Long Cold Day," from Fellini Days. Or the truly amazing suit "Plague of Ghosts" -- in six parts from Raingods with Zippos. The performer can be funky, a raging messianic prophet, a confused wailing voice in the desert, a megalomaniacal streetwise punk, or simply a man who takes the world and its workings with a huge boulder of salt. But his persona can also be an uplifting moment of sanity in a confusing, violent world -- check "Brother 52." The other revealing thing abut this collection is how Fish continually surrounds himself with musicians of the highest caliber, capable of hard rock, prog rock, funk, and of course the kind of swirling theatrical sound that can support a performer as over the edge as the subject of this retrospective. For those who have been wondering about Fish, or for those who have forgotten him, Bouillabaise makes a startling and demanding case that here is an artist who carries a banner for big rock that has all but been relegated to the dustbin. Fish, in his way, is certainly in the company of Peter Gabriel and Bruce Springsteen. Fish makes records that become movies in the mind, big statements about whatever he chooses, because of his utterly and shamanistically convincing ability as the singer and songwriter who conceives and weaves them.

A great collection, with a few of the older Marillion tracks thrown in for good measure. When Fish and Marillion parted company, the pundits screamed that both would disappear without trace. Both however have maintained a hardcore following. Still relevant? Absolutely. This collection should please old and new alike. There is something here for everyone - the early solo material like "Big Wedge" & "The Company" still stand head and shoulders above the rest for me, but the later stuff is good to hear too, and the man certainly has not lost his touch.

For the first time a double CD collection that encompasses the career of the most successful progressive rock singer since Peter Gabriel with Genesis. "Bouillabaisse - The Best Of Fish" features the massive Marillion hits "Kayleigh", "Lavender" and "Incommunicado" through to the singer's more recent solo material which still brings the fans out in droves.

Fish left Marillion in 1989 (although some people still think he is in the band) to embark on a varied career that is amply captured in this double CD 'Best Of'. It comes in a lavish cover complete with a superb cover artwork. Luckily you can judge this 'book' by its cover as the music contained inside is excellent. There are three Marillion originals - 'Kayleigh', the beautiful 'Lavender' and 'Incommunicado' to add to the mix before you even embark on the solo offerings. All his solo work is covered from 'Big Wedge' and my personal favourite Fish track, 'A Gentleman's Excuse Me' from his debut album right up to his latest album 'Field Of Crows'. Other gems include his duet with Sam Brown on 'Just Good Friends', the lavish effects strewn 'Credo' and 'Caledonia', from the Frankie Miller tribute album, that sees Fish deliver one of his best vocal performances ever. Nice touch in putting the slower/ballads all on one disc with the rockier moments (or 'Rocketeer' as is titled) on the other disc. For those who stopped listening after 'Vigil...' or still think the poor man fronts Marillion, this is an essential and ideal starting point to a varied solo career. Not really aimed at his hardcore fans as they will doubtless have everything on here although some may like it just for the cover art work and poster inside!
